I vote paella. Get shrimp, mussels, squid, and scallops.
The scallops may not be the most traditional, but given the opportunity you always get scallops.

You can buy seafood fresh off the boat here. It’s the best. Walk out the back door of this particular fish market and you’re on the slip the fishing boats berth at.

Nah, see, I know someone who harvests wild scallops and I can buy them for half that price if I want.

That’s how the AL beaches are (and to a lesser degree, the restaurants). It’s pretty vertically intgrated so almost everything is same-day fresh. What a huge difference it makes.
The pic above is FL, not much commercial fishing in this spot, but still same-day catches at the markets. I’m partial to the giant Gulf shrimp called Royal Reds. They’re out of stock about 90% of the year
